We produce medium and dry real ciders made from 100% fresh apple juice. We collect our apples from around Nottinghamshire with the help of our volunteers from Clifton's Summerwood Community Garden Project.
We then shred the apples and press them with a traditional rack and cloth press. We do not add yeast in our cider as yeast occurs naturally on the skin of the apples and in the air. This yeast gives rise to the fermentation that influences the taste of our final product. We store some of our ciders the traditional way in 200ltr oak whiskey barrels which gives some of our blends a beautiful smokey oak flavour.
We blend our apples varieties using desert, cooking, wilding and bittersweet cider apples such as Tremblets Bitter and Yarlington Mill to create unique and balanced ciders. We’ve even found a few old Perry pear trees that provide us with a limited stock of Perry. Blink and you might miss it!
